  • 1 tbsp dry mustard
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked salt, such as this one from Spice House
  • 1 tbsp coarsely ground black pepper
  • 1/2 tbsp cayenne pepper
  • 2 racks baby back ribs (about 4 pounds total)
  • 1 cup barbecue sauce

  1. Start by preparing the mix. Put the brown sugar, mustard, paprika, garlic powder, onion powder, smoked salt, black pepper, and also cayenne in a tiny bowl and keep mixing until it’s all blended.
  2. Remove the fat from the ribs. For super-tender ribs, get rid of the fat that covers the bone on the underside of the ribs.

  6. Quick-release the ribs and quickly move them to a baking paper. When the 20 mins are up, carefully and quickly use the quick release and using tongs, transfer the ribs meaty-side up to a flat pan; the ribs need to delicately shift so they are not damaged when lifted, and the meat will also be pulling away from the ribs.
  7. Pour the sauce on the ribs and put them on the stove or grill them (optional). Rub the ribs with sauce on all sides. Sear or grill on medium-high warmth up until part of the sauce is browned and sticky, around 3 to 4 minutes.
  8. Cut and serve the ribs. Place the ribs on a cutting board and cut in between the ribs right into slices. Serve immediately.

Notes: Make in advance: The ribs can be covered with the dry rub and also cooled overnight. The prepared ribs can also be frozen up and cooled for up to 2 days before reheating on a stove or grill on medium-high heat adding the sauce.
