  • 1 tsp. garlic puree or minced fresh garlic
  • 2 Tbsp olive oil
  • Fresh ground black pepper to taste


  1. Start by cutting some of the fat from around the chops.
  2. In a pot start to mix the merlot vinegar, cut fresh rosemary, chopped fresh thyme, minced garlic, olive oil, and black pepper to make the marinade.
  3. Now place the lamb chops inside a Ziploc bag, pour all the marinade mix in, and let the marinade magic happen for around 2 to 4 hours in the refrigerator.
  4. When is ready, it’s time to start to cook it!. Using a colander let the lamb chops drain in the sink and let them achieve some room temperature while you start to preheat the grill.
  5. Preheat the gas or charcoal outdoor grill to medium-high heat. You can test if it’s ready by placing your hand on top of the grill (a few cm from the grill) to feel the heat, if you can leave your hand without burning for 7 secs is warm enough.
